My boot camp journey….. June 26, 2010

Since I had my girls I feel like everything I do is for them.  Many of the things I used to do to take care of myself have been moved to the back burner, including eating and exercising right.  As Amelia gets older I feel worse and worse about the leftover baby weight.  Hello….my baby is now 14 months old!!!!!  So with 30+ pounds to lose, I decided I HAD to fix it!  

I subscribe to (daily deals in the ATL) and about 6 weeks ago an offer came up for boot camp.  Four weeks, five days a week for $44.  This was my chance!!!!  I knew 4 weeks wouldn’t take care of everything, but it was what I needed to jump-start my fitness!  So with my friends Ashley and Eryn, I began my boot camp journey.    Day 1 we ran a mile (12 minutes 45 seconds) and did as many sit-ups (30) and push-ups (25 girl push-ups) as we could in 2 minutes. 

Today as week 4 ended, we did our test again.  My mile was 10 minutes 17 seconds, I did 57 sit-ups, and 18 boy push-ups, 25 girl push-ups.  Still not fabulous, but so much better!  Even better, my clothes are fitting better and I feel great!  I am not always happy about getting up at 4:50 in the morning, but once I am done with the workout I am so happy!!! 

The feeling is so good Ashley, Eryn, and I are starting week 5 on Monday!  I can’t wait to see where the next 4 weeks will take us!

Last summer I began my journey as a SAHM.  I finished working at the end of June.  Amelia was 2 months old, I was adjusting to 2 children and a new home.  I loved summer!  I thought the lazy days were amazing and having the girls with me at all times was wonderful!  As I was in my SAH bliss, my friend Ashley secretly hated me as she was counting the days until her daughter went back to school.  At the time I could not understand why she wasn’t as happy as I was……now I so get it!

I love my girls dearly and feel very fortunate to be able to be at home with them, but summer is the worst time of year!!!  That lack of structure I loved last summer is soon to be the death of me!  Keeping them entertained in 90 something degree heat on a small budget is impossible!  Keeping them from killing each other is also a challenge!  I have gone from educator who cries with joy on the last day of school to parent who cries because school is no more!  I am not sure I will make it until September!  Until then we will spend as much time as possible on playdates and at the pool hoping to keep them happy and me sane!

So Ashley, now I understand…..


Yummy (and easy) Chicken Pot Pie June 22, 2010

I was bored last night, and so tired of eating grilled chicken and a veggie, so I decided to try to make a chicken pot pie.  I made up the recipe based on what I had in the fridge and it turned out great!

2 frozen pie shells

1 can of campbells cream of potato soup

1/2 soup can of milk

1 small bag of peas and carrots (steamed)

2 boneless, skinless chicken breasts shredded

Salt and pepper to taste

Mix chicken, soup, milk, and veggies in a bowl.  Pour the mixture into the first pie shell.  Top the pie with the second shell.  I flipped on top and it came right out of the metal pan.  Cut slits in the top of the shell.  Bake at 375 for 45-60 minutes.
